World Class Contributors and Excellent Organization........2006-06-03
`Off Duty, The World's Greatest Chefs Cook at Home' is compiled from contributions of 47 extraordinary chefs and one superior culinary journalist, by prominent UK chef, David Nicholls in order to raise funds for `The Nicholls Spinal Injury Foundation', created to support research following chef Nicholls' son's paralyzing spinal injury about three years ago.
For starters, the subtitle is not exaggerating the claim of representing `the world's greatest chefs'. Not only is every single contributor a major culinary star, some such as Charlie Trotter, Thomas Keller, Alain Ducasse, Daniel Boulud, and Jean-Georges Vongerichten are certifiably among the very best chefs in the world, even more prominent if you are limited to the English speaking world. And, in spite of the self-interest of the target charity, I offer the notion that this is truly a better than typically deserving charity, as one of it's primary objectives may be support for stem cell research to treat spinal injuries, which can be done in the UK with no reservations, yet cannot be pursued unshackled by Government strictures in the United States. I'm particularly moved by the fact that American Thomas Keller and Englishman Gordon Ramsay both did heartfelt forewords to the book.
Each chef's recipes are prefaced by the same mini-interview, and when you take the 47 sets of answers together, you get a really insightful look into the psyche and profile of `the world class chef'. I was particularly tickled by the number of chefs who cite the mortar and pestle as their favorite kitchen tool. Watching two or three episodes of Jamie Oliver's TV shows should be enough to convince you that this tool is a seriously overlooked item in the average American kitchen. This part of the book alone is a world better than the similar squibs from the 11 culinary stars profiled in the similar `Food Network Favorites'.
Another major improvement over the Food Network volume is the fact that each chef offers three dishes that together comprise a very nice menu. My only caveat here is that I have strong suspicions that people like Keller, Trotter, and Boulud do NOT cook these dishes at home, except possibly to do some fancy entertaining. One clue is the prominence of high-end ingredients such as truffles, caviar, and foie gras in many of the recipes. And, I have seen some excellent `cooking at home' recipe books from the likes of Charlie Trotter and Wolfgang Puck, and they are a lot simpler (except for Jamie Oliver and Rodgers and Gray) than the dishes in this book.
Overall, I believe the recipes are quite good. Regardless of whether the chef is British or American, all units are given in both Imperial (spoons and cups and ounces and inches) and metric (liters and grams) units. The only caveat I could find with the recipes is the fact that the picture of the dish did not entirely fit the preparation, although the differences were small.
If what you want is true home cooking recipes, Melissa Clark's similar effort, `Chef, Interrupted' may be just a bit better; however, the great personal insights and the high level of contributor is not there.
This is not my favorite kind of cookbook, but of its type, it certainly sets the standard for others to follow.
Great Book, Great Cause.......2006-05-25
The "author", if you want to call him that I guess he would be more of a compiler, of this book created this book in order to help out his son. His I believe 19 year old son was injured in a swimming accident in Australia and is paralyzed David Nicholls created a non profit research organization to help find a cure so his son can walk again. I personally will be buying approximately 4-5 copies and mailing them to friends just to help the cause. Great recipies from some of the greatest chefs all over the world and a good reason, as if the recipies weren't enough, to buy the book.
A decent cook book and a good read.......2006-04-03
Most products designed to raise fund for a particular cause have little `real' value. These products are, at the most, tokens of appreciation for the supporters of the cause. So when I bought Off Duty, The World Greatest Chefs Cook at Home in support of the Nicholls Spinal Injury Foundation, I didn't expect much out of it. It was going to be just another title in my cook book collection. To my pleasant surprise, this is a handsome book to look at with tons of color photographs - 201 photographs to be exact - most of which are of the finished dish, the rest are of the chefs themselves. This is an interesting read for those of you who are, besides your love of cooking, curious to what each chefs has to say, for it includes a short history and / or interview for everyone of the chefs featured in the book. But the best thing that this book has to offer is the many doable recipes for the home cook like myself. The book has 288 pages with roughly 150 recipes organized by chefs. I thoroughly enjoy this book, a decent cook book and a very good read. And one last thing, for those of you who still believe that British cuisine is nothing to talk about; this volume will change your mind. Highly recommended.

Great ideas for Seattle dads -- and very funny too!.......2006-01-19
THE ONLY GUIDE BOOK RECOMMENDING THE TOWN DUMP AS A TOP ATTRACTION! As a Dad of two small children living in Tacoma, Washington, I heartily recommend this book to you other Dads in the Seattle-Tacoma area looking for activities enjoyable for your kids AND you!
I received this book as a gift from my children for Christmas, and it ended up getting passed around between everyone all morning because it is hilarious! It is an incredibly entertaining, easy read and there are some really great ideas in here from someone who obviously has a lot of experience entertaining children in Seattle. Every listed attraction includes a summary plus an awesome "bore-o-meter" which rates the attraction on things like machinery, loudness, largeness, sugar and rhythm -- not typical categories of merit, but very applicable if you have kids!
There's even a Dad Duty "Cheat Sheet" that includes a quick listing of attractions, along with bore-o-mete ratings, duration and drive time. I suggest tearing this out and keeping it on your fridge or in your wallet for quick ideas on the go.
Here's an excerpt that explains Vent's philosophy in a nut shell: "Avoid the 'riums' and 'seums' such as aquarium, planetarium, museum, auditorium...ad nauseum! Save these outings for the in-laws and school fieldtrips. Don't worry, your kids will get cultured, but you can concentrate on adventures that knock your kids' sock off - or, at least get something useful done like a trip to the dump."
If that rings true for you, then you will definitely get your money's worth out of this book.

This volume along with the second provide a unique insight into the life and thoughts of a young and developing genius in mid-nineteenth-century Scotland. This work is a wonderful history not only of one of the greatest physicists of all time, but of a humble Christian. Flashes of a humor, personal struggle, tragedy are intertwined between notes of mathematical proofs, and researches. An amazing and truly inspiring complilation. I look forward to the release of the third volume with anticipation.

I bought this book to help me figure out what type of birth experience I wanted to have. This book has made me want a home birth, which I never thought I'd have the courage to do. This book is empowering, to say the least.

I believe this eye opening book should be read by EVERYONE!! I started reading and could not put it down. Don't hesitate to read this book if you are pregnant or planning to be.

This book is full of invaluable information! From the history of birthing women, to the medically managed crisis in today's hospitals, the reader will get the full picture of why women are completely capable and can be confident to give birth according to their instincts. Don't be turned away by the, I think, radical title. This book is an eye opener, you will fall in love with the natural process and beauty of birth.

It gives confidence and validation for choosing natural birth, then go read Ina May Gaskin's stuff for more specifics. This book is good, but both of hers are better.
Another perspective.......2006-01-18
I absolutely loved the vignettes in this book but found much of her information to be incorrect. While I do agree that medicine has destroyed the magic of birth, I do not believe that it is a commercial conspiracy against women. Women are able to research pregnancy and childbirth at any time (currently) so it's not 'the man's' fault is she chooses to remain ignorant on the subjects.
I had a wonderful labor and birth with my son--I had an epidural, an Iv due to an infection, and pain medication because I was terrified of going through the same pain my mother and sister did with their children. I felt my son come out, I was not groggy, he was not groggy and we rested quite comfortably for 2 hours before anyone weighed him or even bathed him.
I found a lot of the information presented was outdated and incorrect. I do not know anyone who was separated from their infant by force but I do know a few women who insisted that the baby be removed from their sight!!!!! I did not let my son out of my signt and haven't for 15 months! I would like to add that I refused an internal monitor and my nurse respectfully listened to me. My baby was not taken from me at any time, I breastfed immediately after birth, he slept with me, my husband stayed in my room ,did not have to wear scrubs or anything unnatural and we were an extremely happy family!
I loved labor and delivery and all the pressure in my back and birth canal was worth it!
This is worth the read but please do not base your entire pregnancy and birth on the information presented here. Research your options, read academic and medical journals, read about midwives, read about OBGs and most importantly, listen to your gut!

A fine introduction to "la cuisine de champignons sauvages".......2004-02-10
A collection of French wild mushroom recipes by British cooking writer Jane Grigson. This book is an excellent source of recipes and inspiration for the use of wild mushrooms, for chefs and experienced home cooks alike. The book has over 200 recipes for wild and domesticated mushrooms of all kinds, both as a main part of the dish and as an accompaniment to meat, fish, and fowl. Particularly useful is a section at the beginning covering some 20 species of mushrooms, describing the unique culinary properties of each and listing the recipes that would suit them best. I particularly like the fact that this book covers not only the "usual suspects", that is, cultivated agaricus, porcini, chanterelles, morels, truffles, etc, but also covers less well-known wild mushrooms like fairy-ring mushrooms, blewitts, grisettes, russulas, etc.
The recipes in "The Mushroom Feast" bear the unmistakable stamp of pre-nouvelle French haute-cuisine (though the book also has a whole chapter of Asian-inspired recipes as well). This has its good and bad sides - good in the sense that the mushrooms are used in in the context of tasty "gourmet" European cooking that I find does justice to the intense flavor of wild mushrooms, but not so good in the sense that it often calls for sauces that are richer in butter, cream, and roux than they need to be. However, with a basic knowledge of sauce-making technique, one can easily turn these into simple reduction sauces that don't overpower the rest of the ingredients.
Some of the editorial reviews mention that this book is a useful guide to distinguish edible and poisonous mushrooms. This book is not, in fact, useful as a field guide and inexperienced persons who go out and gather mushrooms for the table using this book as their only guide do so at their peril! If you are going to be cooking with the mushrooms in this book, one first needs to get some experience in identification of wild mushrooms, or stick with the wild mushrooms you can buy from your local gourmet grocery or farmers' market.
All in all, this is a book that belongs on the shelf of anybody who likes to cook with wild mushrooms.
