safely process shrimp.......2007-03-30
There is a nifty amount of detail here for the shrimp farmer and processor. As well as for the casual reader, interested in how shrimp gets to her table. A global business, where safety is the overriding consideration.
For example, when a shrimp is killed, its head must be promptly removed. Because this contains powerful digestive enzymes that can rapidly decay the meat in the tail. This removal is either done by machines (in developed countries), or by hand (in developing countries).
The book describes how shrimp tails (actually abdomens) are tested for quality. And how they must be rapidly frozen. There are diagrams of various shrimp processing machines. The most common processing steps are given. Like treating with phosphates. These improve the retention of water during the freezing and thawing cycles. The text sets out what is essentially a recipe, fully detailing how this should be done.

Book Description
The meat industry is the sector in food processing most vulnerable to the effects of foodborne pathogens such as E. coli 0157 and Salmonella. As a result, it is constantly looking for ways of improving safety. Against the background of consumer and regulatory pressure, the effective implementation of HACCP systems is critical. Written by leading experts in the field, HACCP in the Meat Industry provides an authoritative guide to making HACCP systems work successfully. Part One sets the scene by outlining some of the key issues and the regulatory context in the EU and the U.S. Part Two looks at the application of HACCP principles from the farm to the abattoir and the preparation of fresh meat for sale. There is an initial discussion of setting up HACCP systems on the farm and HACCP plans for the rearing of cattle, sheep, goats, poultry, and pigs. Subsequent chapters then consider HACCP systems for slaughter and other processing operations, examining red meat processing plants. The book covers effective implementation, establishing and monitoring CCps, validation and verification procedures, the auditing of HACCP systems, and future developments in HACCP. The structure of the book provides you with chapters that give a clear account of one aspect or cover one type of material and therefore can be used as stand alone units, allowing you to go directly to the information you need. Taken together they present a practical and coherent guide to HACCP and the industry. HACCP in the Meat Industry gives you the tools you need for successful implementation of HACCP systems in meat processing.

Book Description
Meat and Meat Products integrates the fundamental disciplines of food science, such as chemistry and microbiology, with processing technology and product - related aspects such as criteria for acceptability. The book provides thoroughly integrated and up-to-date coverage of this important food group and by careful use of learning objectives, tables, figures, boxes and exercises, guides the professional and student alike through its user friendly and clear format.
The book includes details of conversion of muscle into meat, uncooked, comminuted and re-formed meat products, cured and cooked meats and meat products, fermented meats and frozen and dried meats and meat products. The study of meat and meat products is a major part of most food science and technology courses, and is therefore invaluable to undergraduate students studying these disciplines and to those taking more specialized MSc or other postgraduate courses.
As the book provides thorough coverage of all industrial aspects, including control points (HACCP), it is also of great use to food industry employees involved in product development, production management and quality assurance, especially those studying for professional qualifications. Academics involved in teaching elements of this subject and personnel involved in a regulatory capacity should also find this book ideal for their use.

ABOUT THE BOOK.......1999-11-03
i would like to have more informations about the book, e.g is the book contains meat chart, the parts of meats and etc.. your informations much appreciated.
It is a good referencebook, even for dutch students.......1998-09-02
The book has been used at the school for higher education in Food Science and Technology: The Van Hall Institute Leeuwarden, The Netherlands. The good things of the book are: It is easy to find your way in the book. The book is not too simple. It is really meat-technology in the book no butchery. It is a pitty that the book is difficult to read, and that the topics are typical brittish. Waterbinding does not get any attention at all. Addition of experiments would be good.

Book Description
Red meat, poultry and eggs are, or have been, major global causes of foodborne disease in humans and are also prone to microbiological growth and spoilage. Consequently, monitoring the safety and quality of these products remains a primary concern. Microbiological analysis is an established tool in controlling the safety and quality of foods. Recent advances in preventative and risk-based approached to food safety control have reinforced the role of microbiological testing of foods in food safety management. In a series of chapters written by international experts, the key aspects of microbiological analysis, such as sampling methods, use of fecal indicators, current approached to testing of foods, detection and enumeration of pathogens, and microbial identification techniques, are described and discussed. Attention is also given to the validation of analytical methods and Quality Assurance in the laboratory. Because of their present importance to the food industry, additional chapters on current and developing legislation in the European Union and the significance of Escherichia coli 0157 and other VTEC are included. Written be a team of international experts, Microbiological Analysis of Red Meat, Poultry and Eggs is certain to become a standard reference in the important area of food microbiology. Professor Geoff Mead is internationally renowned for his research on microbiological aspects of poultry production and processing.

Customer Reviews:
Just buy the Serbia Guide.......2007-08-16
The page count (over 300) led me to expect a guide with extremely detailed information about Belgrade and its sites, restaurants, etc. What I did not notice in the description was the book's dimensions ... it's VERY small. Basically, what you are buying is the "Belgrade" chapter from Bradt's "Serbia" guide, with a minimum of additional information. If you plan on seeing more than just Belgrade, buy the Serbia volume and you'll get almost all the same info, plus info on the rest of the country. If your only destination is Belgrade, I suppose this will save a little room in your luggage.
Excellent city guide.......2007-01-03
A truly complete guide to one of the most fascinating modern capitol cities in Eastern Europe -- Belgrade, Serbia. From discos to frescos this book describes all the sights in dramatic detail and with some color pictures as well. Since the wars in Yugoslavia, no tour guides have been published, this is the first one to be published since the breakup of the countries in Ex- YU and it is done very well.
Book Description
This book begins with Washington's return to Mount Vernon, a victorious, but exhausted soldier eagerly seeking the pleasures of a quiet country life. Free of heavy responsibilities, his character expands in genial, often unexpected ways. All too soon, however, the idyll is broken. This promises to be the biography of Washington that will best serve our generation.
Customer Reviews:
Washington was a great man.......2005-03-12
This book is the third in a series by Flexner on the life of George Washington. I highly recommend this series for anyone seeking to really understand the founding fathers. Flexner draws his material from many different sources to dovetail the life of Washington with those around him. His attention to detail makes the book a facinating read from cover to cover. It is quite a journey you are taking with a great man. I am so glad that Flexner took the time to put together such a magnificent compilation of data. I feel so much more appreciative of George Washington for all that he did to hold our nation together in its formative years after reading this book. A must read for those who love history!
GW and the New Nation, (1783-1793).......2002-03-20
This the third installment of a four volume series by James Thomas Flexner on the life of George Washington taking us through the years 1783 - 1793.
We see Washington returning to his beloved acres... Mount Vernon, after the British are finally leaving the American shores. Washington is exhausted and wants to retire and live out his life in the resplendency of his home and family. We begin to see Washington open up so to speak, relaxing in his quiet country life. But again the matters of the New Nation are begining to pull and strain the rather reluctant Washington to a leadership roll.
Being a very popular figure in early American life... Washington now is growing in popularity and as such is called to lead the Constitutional Convention for ratification of a new and untested government. Washington is elected to become the First United States President. Flexner gives us a lot of detail and put into the writing feelings and emotions felt at the time.
From the writings that were written about Washington from his peers and thoughs of Washington to others, we again see Washington's fallibility, a man wrought with insecurity and heavy responsibilities trying to cope with a newly emerging government. Even present that others from overseas were watching and waiting for the new government to fail, but proving to them a government viable and alive. But, alas, Washington is now aging and retirement is begining to take hold once again in his life.
This volume take us through Washington's thoughts and thoughs of Jefferson and Hamilton and how does Washington really feel. Washington is now working harder than ever trying to forge this fledging government into a working model of that written on paper. We see Washington's self-doubts again arise... troubling him with insecurities. Then again, who can he trust, to give correct counsil and if he left too soon would the government fail. If he stayed too long, would he be no better than the Kings he fought. We feel Washington's dilemma.
I found this book to be very well written with sound documentation.
Great Book About a Great Man.......2000-04-07
George Washington and the New Nation is actually the third in a four volume set, and continues to follow the life of George Washington after the Revolutionary War. From the years immediately following the last withdrawal of British Troops, up through the end of his first term as the President of the United States.
Flexner does an excellent job of describing the man behind the legendary hero. Through the actual writings of Washington, and those of his contemporaries, we see not only the "Great General" and the "Father of Our Country," but also see Washington as fellow human being, just as fallible as the rest of us.
This is also a remarkably telling book about the nature of politics and how in over 200 years, very little has changed. As distrustful as we are of todays politicians, Flexner's book puts those of Washington's days in an even less favorable light - and he uses their own words to do it.
Through this book (and the other volumes in the set) I gained an even deeper appreciation for the one who was "First in War...First in Peace...and First in the hearts of his Countrymen." I heartily encourage this book and this entire set to all.
Book Description
This expanded second edition, which features a foreward by Dr. Temple Grandin, includes a new chapter entitled Getting Ready for College. New information on common sensory reactions has been added in an easy to read chart format. Finally, there's a new chapter on Shore's recent public involvement with autism spectrum related issues, including speaking at conferences and advocating for services for those on the spectrum.
Customer Reviews:
Beyond the wall.......2007-01-23
Very interesting to read first hand what it is like to live with autism. The author's accomplishments are amazing, but also his awareness of his limitations. A good book to learn more about this condition, also easy and enjoyable reading.
Helping to understand the perspective from an Aspie.......2007-01-09
I recently had a young family member diagnosed with Asperger's Syndrome and wanted to know more about experiences and views from persons with Asperger Syndrome. I believe Stephen was able to inform the reader of what it is like to exist in a world without having the social skills we non Aspies take for granted. The book lets one know the challenges that might exist in the future for someone diagnosed with Aspergers during an early age.
Hate to burst the bubble...........2006-08-20
I purchased this book to gain a better insight about Aspergers. Instead, it left me with many unanswered questions. The book is the equivalent to a boring, monotonous `Dear Diary' that gets stuck in one era: His college years and his interest in music. (This is understandable as the author is terrified of life outside of college, & music is all he knows.) Yet I craved more details, I wanted to know more about Mr. Shores' childhood, his parents, the stims, and the chaos...DETAILS!
It felt as if the author was trying to prove how intelligent he is, boasting of his accomplishments and how he's almost neurotypical. His failures were blamed on other people out to get him for unknown reasons. Lets say it for what it is: A man who looks kind of disheveled and a bit `odd' (Unabomber) gets a job in a financial institution, he rides his bike in, hangs out in the shadows getting dressed, doesn't socialize - and no one wants him around. It's BECAUSE HE'S WEIRD! Yet the author blames his co-workers.
I'm sorry but the reality is, the author probably can't see and understand that he IS different because he has Aspergers! I mean, most typical people can spot someone that is odd/weird/different a mile away. They avoid them not because they're being hurtful, they just can't relate to that person.
I wished he had focused in much greater detail about his feelings, emotions and behaviors when he was younger-to gain a better understanding of what shaped him into the person he is now. The book was written as if he fast-forwarded through his entire youth and got stuck on `pause' when he got to college. While this is obsessively interesting to him, it was tiring reading page after page of redundant accounts of his college days.
There is no depth to the book, it was shallowly written and there is not enough elaboration to make me understand, (or want to for that part) what makes Stephen Shore the person he is. While this may be due in part to his disorder, it left so much to be desired.
I'm sorry to anyone who takes offense to this review, as this is not my intention. I applaud Mr. Shores accomplishments and the hurtles he's overcome. He must be MUCH more dimensional than the book conveys. I wanted to know more about HIM and not what he's done in his life.
I'd suggest a better read would be one of Temple Grandin's books. I got a true feeling of who she is and an understanding of how she got there and how autism fits in. She goes into details about what she was thinking as a girl, teenager and adult. Her pranks, her temper, the metaphors and their importance..everything.
I bought this book based on reviews, and I felt it necessary to give mine.
Quirky? We are all on the autism spectrum!.......2006-04-19
I have two young children on the autism spectrum. My constant fear and therefore my constant drive is to help them be independent and happy in their lives. Fortunately, both have very mild forms, one PDD and one autism. So, as I watch and learn from their ways of learning, I find that first, I have many quirks, and then can see those quirks in others. It is a fascinating way to look at the differences in how we all learn. In many ways, we are all on the autism spectrum.
This was an easy read, and one that would be of interest to those studying in the field. It is not too full of jargon, and can easily be read by all. This is a field woefully undertaught to teachers seeking certification.
Would like to meet you, Stephen....
What It's Like On "The Inside".......2003-12-18
As the father of a seven year old son who resides at the light end of the Autism Spectrum, I found Stephens book to be one of the very best I have read by someone who resides on The Spectrum themselves. It is also notable as one of the few autobiographical books by a male. Quite simply put, Stephen's forthrightness is wonderfully disarming. And his very unique ability (especially for someone actually on The Spectrum) to relate not only how the world appears to him but also how that reality fits into the one we nuero-typicals live in, shows an oversight I don't encounter in most typical adults. His positive example is nothing short of a godsend. Beyond giving us hope for our sons, daughters and loved ones who reside with Stephen in this very fascinating place, Stephen's book helps to unravel the mysteries we strive to understand every day. And that Stephen has achieved what he has thus far and has dedicated his life to furthering knowledge about and advocating for the individual on The Spectrum is testimony to this wonderful mans character (and to the loving devotion of his mother, his wife and his mentors!). I only hope my son strives to be half the man Stephen Shore has shown himself to be by this book. If you've just had The "Autism Bomb" fall on you - that is to say, just gotten the diagnosis, you owe it to yourself (and your loved one) to pick up this great book and start thinking positively now at the beginning of your journey, about your gifted child.
