Beth Hensperger and Julie Kaufmann's The Ultimate Rice Cooker Cookbook offers 250 timesaving, convenient, and healthy recipes for making everything from simple white rice to full-course meals. This cookbook proves the rice cooker--which tends to have a bad rap as a never-opened or oft-neglected wedding gift--can be surprisingly versatile: not only does it prepare your rice, it can be used for every dinner course--salad, soup, vegetable, entree, and even dessert.

There is a complete buying and cooking guide for the many rice varieties, as well as other whole grains such as barley, millet, wheat berry, and quinoa. Many of the recipes provide convenient alternative cooking methods for traditional dishes like Italian risottos (the Italian Sausage Risotto is wonderful). Hensperger and Kaufmann show the rice cooker can also work miracles for hot breakfast cereals and porridges with such recipes as Hot Fruited Oatmeal. Delightful main courses include Steamed Ginger Salmon and Asparagus in Black Bean Sauce, and the meal is done almost exclusively within the rice cooker for simple preparation and cleanup. The dessert section has many ideas beyond the expected Old-Fashioned Rice Pudding--the Poached Pears with Grand Marnier Custard Sauce is one elegant and sophisticated example. Both authors of this cookbook are seasoned food writers and this combined effort gives tasty, easy, and healthy recipes that will motivate you to use what has been, until now, an underutilized appliance. --Teresa Simanton

3 out of 5 stars The Ultimate Rice cooker Cookbook.......2007-10-10

This cook book has extensive histories of rice and other suggested grains; good for the historian, bit much for this cook! Recipes, once you get to them are fine. I'd ordered another rice-cooker book at the same time, one aimed at students -- which I found to be handier and easier to use.

5 out of 5 stars Very good as a simple reading.......2007-08-12

Even if you don't buy this book as a companion to a fuzzy logic(high recommended), it's still a really good read about rice. The only thing that is a let down about the book is the detail information, the print type, and occasionally the layout. Also, the biggest thing that is frustrating me with the book is trying to figure out how to measure liquids. They give conflicting,IMO, advice on how to measure out liquids and go on to say that "...always specify the difference." I didn't find that to be clear or the case in some instances. (If anyone can clear that up for me, that would be great.)
Otherwise I still would recommend this book, and will probably buy 2 for family members for Christmas. It's worthy of being on a kitchen bookshelf.

5 out of 5 stars Great cookbook........2007-05-09

This cookbook has a big variety of recipes to try in your rice cooker! If you have recently bought a rice cooker or had one for a while & want to learn more ways to use it, then get this book! I must add a lot of the recipes will require a rice cook with fuzzy logic (or the more advanced/expensive cookers.)

5 out of 5 stars Rice CookerRecipes.......2007-04-10

I am new to rice cookers and I found this book to be very helpful... There are so many recipes that everyone will find lots to choose from... I refer to this book every time I use my cooker... Everyone who has a rice cooker should have this book.

5 out of 5 stars Something other than Potatoes-Rice-Stuffing.......2001-02-07

Polenta has started to really come into our diets, and even now we have the quick fix mixes, the packaged rolled variety ready to cut and grill. The Italian invasion is upon us and we're loving it.

Here is a beautiful little book which really gives us a great resource to enhance our use of this corn based delight in so many ways -- small pizzetta, grilled plenta crostini (one of my favorites with smoked trout and mascarpone), Polenta Lasagne, and one borrowed from Rockenwagner's cookbook (which Brigit helped bring to press) Polenta Fries.

This book will not only give the clues to turn out delicious polenta of all varieties but will expand our usage of this delightful side dish ever more. Mail order sources and great color photos abound.

I've made about 6 different recipes and they are all wonderful! One in particular, soft polenta with braised sausage sauce, has become my stand-by polenta recipe.

"Though good Italian cooking should be rooted in strong regional traditions," Biba Caggiano writes in her introduction to Italy al Dente, "I also believe that one should not follow rules slavishly because ... food adapts itself to new modes.... Flexibility in the kitchen is essential, the quality of ingredients is everything, and simplicity of execution is a must. Another important prerequisite of the Italian cook is fantasia, or imagination and creativity."

One might view this book, then, as a guide to Italian fantasia, Biba style. Start with brodo, or broth, and move right along to Bean, Cabbage, and Rice Soup. Or Barley and Porcini Mushroom Soup. Biba Caggiano has been in the Italian food game long enough that she is determined to come up with special treats for her old fans and new followers alike.

Both elegance and simplicity lace their ways through this cookbook as it addresses Italian foods found most often at the front end of the meal: soups, pasta, risotto and rice dishes, gnocchi, and polenta. Biba is determined to take the reader right to the heart and soul of Italian cooking. Risotto with Duck Ragu? Case closed. --Schuyler Ingle

Book Description

Pasta, polenta, gnocchi, risotto, soup--these are the heart and soul of Italian cooking. Simple, hearty, and filling, these dishes can satisfy any craving, any time.

Do you like pasta? Biba gives you pasta--three chapters of pasta, eighty-seven recipes in all. Prefer your pasta stuffed? How about Eggplant-Goat Cheese Tortelli with Fresh Tomatoes and Black Olives or Spinach Cannelloni with Duck and Wild Mushroom Stuffing? Want to try a new spin on lasagne? Lasagne with Walnut Pesto and Ricotta might be just the thing. If you like to keep it simple, Biba can feed your hunger with inspired but quick-to-the-table recipes like Spaghetti with Hot Anchovy Sauce or Pasta with Spicy Broccoli.

Polenta and gnocchi are the quintessential Italian comfort foods and Biba's hearty recipes serve up satisfaction and surprising variety--Potato Gnocchi with Osso Buco Sauce; Saffron Gnocchi with Mushrooms, Prosciutto, Asparagus, and Cream Sauce; Polenta with Fontina, Butter, and Sage; and Soft Polenta with Pancetta, Garlic, and Hot Pepper, to name only a few.

Risotto and soup--what better choices can one have on a cold, wet evening? Whatever you're in the mood for--or have on hand--there's a risotto to fit the bill. Savor Risotto of the Fisherman; Risotto with Roasted Butternut Squash; Risotto with Three Cheeses; or Risotto with Sausage, Beans, and Red Wine. And soup lovers will delight in what Biba has to offer--from thick vegetable minestre like Tuscan Chick-pea and Pasta Soup and Artichoke, Leek, and Rice Soup to lighter fare like Angel Hair in Broth.

Italy at Dente keeps the flavors direct and the recipes simple. If you like Italian, this is a cookbook for the kitchen counter.

Italy al Dente is Italian food that is "just right." There singular recipes are perfectly on target -- precisely the food we want to eat every day, day after day: the simply perfect pasta, flavor-filled gnocchi, hearty soups, steaming risottos, and comforting polenta -- the tastes we crave when we think Italian.

Legions of Biba admirers -- who have brought hundreds of thousands of copies of her cookbooks -- know that no one hits this high note quite as well as she does. Recipe after recipe, each is a peak moment, with dishes like Simmer Spaghetti with Uncooked Tomato Sauce Squash-Eggplant Tortellini with Butter and Sage, Ricotta Gnocchi with Walnuts and Gorgonzola, Barley and Porcini Mushroom Soup, Soft Polenta with Bolognese Meat Sauce, and Risotto with Roasted Butternut Squash. This is simple cooking at its best.

IF you love pasta, you MUST have this book. I have made so many of the dishes in it and everyone loves them! Instructions are very easy to follow too!

5 out of 5 stars Another Great From Biba.......2000-02-25

This book is definately one any Italian cook should have in their reference library. As the owner of over one hundred Italian cookbooks myself, this book is one I often find myself using. There is a great mix of recipes, both traditional and those with a contmporary twist, but all the recipes I've tried have been superb. As the Italian Cooking Host @ Bella Online, I would highly recommend this book to anyone interested in Italian cuisine.

5 out of 5 stars Another Wonderful Book By Biba!.......1999-12-08

Another WONDERFUL Book by Biba!

The Queen of Italian Cuisine! She has written a beautiful book with easy recipies and beautiful pictures...Not quite as good as her others but is a strong contender...

2 out of 5 stars Biba turns out some of the best books and recipes around........1999-10-17

I have lost track of the various recipes of hers I have tried...all were a success. The directions are clear, and easy to follow. The recipes are just like "homemade". Make one of her dishes and your back in "momma's kitchen". I would recommend her books to anyone who wants to learn what Italian cooking is all about. If you have been fortunate enough to see any of her cooking programs on TV - she is an absolute delight. No nonsense - gets to the heart of matter and makes you want to run into your kitchen and start whipping up whatever she happens to be making. Mangia...Mangia!!!!!

5 out of 5 stars Biba writes from her soul and cooks from her heart........1998-11-04

I have been following Biba Caggiano's work for the past 15 or more years and she still amazes me. Her cookbooks are always the best for Italian Food I have ever found. She seems to find recipies that always work and come out the way they should. Her cooking show on TLC was as good as her books and is dearly missed. If anyone get's a chance to visit her restaurant in Sacramento, California please do so... Probably the best Italian Restaurant in the USA..From her first cookbook to her most recent they are books that need to be in every kitchen..I would not want to be in the kitchen cooking without my friend Biba!!!!

Pass the Polenta is a collection of essays about home cooking, which is to say it's a book about home and family and tradition and the unspoken connectedness that comes of people pushing their knees under a table and passing plates of food back and forth.

Pass the Polenta is a book about taking forward from the past all that is relevant, and savoring as memory those elements that serve better as the fodder for stories. For Lust, unlike too many food writers, doesn't simply like the idea of food as something to carry on about, she likes to eat and to cook, to dine with friends and family, and she draws this passion into her writing. When she's cooking at her keyboard, you can taste her best work on the page. And then there is the handful of recipes at the back of the book: stew and polenta, roast chicken, her grandmother's pie, sauerkraut, and potato and leek soup, among others. Connections.

Teresa Lust hails from central Washington State, where agriculture is king. She's Italian on her mother's side of the family--hence the polenta of the title. Somehow a biology degree pushed her into commercial cooking, and commercial cooking got her moving from Washington to California, then from California to New England, where she turned her attention to writing as well as cooking, and earned an M.F.A. It's a happy marriage for Lust, this sense that what's on the plate is more than food, this sense that words on a page can be more than information. It's all to the reader's benefit. --Schuyler Ingle

    Book Description

"Food is not merely about calories and minimum daily requirements and metabolic pathways. At its very heart, food is about people."
    --from Pass the Polenta

Likewise, people are at the heart of this warm, personal collection of food- and family-inspired essays by former professional chef and food historian Teresa Lust. An Italian immigrant grandmother who plucked chickens in the backyard; an introverted mushroom forager who collected chanterelles in the woods; a German auntie who learned to knead bread in a wooden bucket; an unassuming wine shop owner who, after closing, offers a bottle of Châteauneuf-du-Pape and a delightfully unpretentious way to value a wine--all are key ingredients in the zesty culinary heritage that Teresa Lust lovingly serves up. Like the creamy, sweet polenta that wooed her father into her mother's robust Italian family, this book is filled with a myriad of rich flavors, history, kitchen tips, and recipes. Lessons in life learned at the stoves of the many seasoned cooks in Lust's world, these wonderful true stories are an expression of art and love, family and self, soil and the seasons.

5 out of 5 stars Far more than just recipes!.......2002-09-05

If you love food and cooking, you will adore this well-written and fascinting book. It has some wonderful recipes (try her way of "assembling" polenta and gorgonzola and you'll never eat it any other way!) but it's her essays that make this book so special.

She writes lovingly about food, and shares great insights into the world of cooking and 'gourmet' restaurants (for example: "It is a long-standing sentiment among professional chefs that American recipes, while quaint and cozy, really do need to be sent off to finishing school abroad before they can appear in public. I suppose they aren't elegant enough for your average gourmand. Yet what is a French meringue but a mess of egg whites? Or creme brulee but a bowl of pudding?") Ain't it the truth!

This is one "cookbook" that belongs on the literature shelf -- yet it also has some of the best recipes I've found.

Buy it ... read it ... use it.

4 out of 5 stars I read it straight through.......2001-12-12

Teresa Lust is a talented writer and a charming person. Her stories warm you up and the food that she writes about is unpretentious but delicious. She gently proclaims her working class heritage throughout the book and I find that refreshing. She clearly loves what she does so her enthusiasm just runs all over you in a delightful way when you read this book. I read the book straight through! I really hope that Lust writes more books.

Technically speaking, her essays were well researched and the bibliography that she compiled reflects that. The selection of essays is balanced and the editing is good. I counted three typos--not bad for a modern book.

5 out of 5 stars If Pass The Polenta was a Wine, it would be a Five........2001-08-16

Lust has intoxicated me with her writing where words strung together become magnificent aromas, memories of familial kitchen ethnic cooking, raising chickens, Pop's garden, and life growing up in the kitchen where everything was prepared fresh, from scratch, and with favorite family recipes. She has brought to my mind a memorable collection of essays on culinary subjects that everyone who loves to eat would love to read about, and especially in the way that she writes. She alivens the soul to once again slow down and experience preparing hearty food with love and care. "...Polenta" is definately a 5. Thank you Teresa for writing such an inspirational and touching book... and so young you are! Please write more!

    5 out of 5 stars Delicious.......2000-02-13

Outstanding food essays. I want every food lover I know to read it, but I can't bear to part with my copy. It is not leaving my kitchen. The essays are informative, entertaining, and mouth-watering. If you love a good meal, this book with put a smile on your face.

    5 out of 5 stars Don't read when hungry!.......1999-08-09

If you've spent hours speaking about memorable meals.. then this book is for you. It was great to read a book written with a shared passion of food. You can almost smell and taste the meals as described!

5 out of 5 stars Incredibly creative ways with polenta.......2002-09-28

If we don't eat Tomato Polenta Tart several times during the summer, life is just not right. But there was a time when I wondered what was so special about this gluey mass of flavorless stuff. Here in the Wine Country of No. CA it seemed to pop up on plates frequently...a sort of thoughtless addendum to an otherwise great dinner. But then Michele Anna Jordan and her book on the subject came my way and my eyes were opened to all sorts of possibilities. As in all her books, Michele delves into a wonderful overview of the subject, including basic history as well as little known facts. In this particular book, we are blessed with 21 pages of her exquisite prose. And then the recipes..... Orange Scented Duck with Olives and Polenta, Italian Shepherds Pie, Baked Summer Tomatoes filled with Polenta, even four variations of Polenta Poundcake. Need I say more? Now if I don't have polenta in my pantry and Michele on my bookshelf, something is wrong!!

5 out of 5 stars the encyclopedia of polenta.......2000-05-05

Having lived in Northern Italy for several years I had tried what I thought was every possible way that polenta could be prepared and in every possible dish. I returned to the States thinking I was addicted to polenta. It was and is for me what rice is to the Chinese. I cook and enjoy polenta a couple of times each week. I thought I knew all there was to know about polenta until I discovered Michelle Jordan's book. I'm now enjoying polenta in ways I was not aware of despite considering myself an aficionado. The narratives that accompany her recipes are informative and interesting. A great addition to my cook book collection. Makes me want to go back to Italy and have polenta on location again. Mille grazie.

                          Book Description

Create paper-pieced quilts for yourself or a favorite stitching pal and showcase a subject you both love--sewing! Delightful pictorial sewing-room blocks in both 4" and 6" sizes are provided, along with a larger block depicting a traditional Sunbonnet Sue busy at work on her latest quilt. Turn blocks into small wall quilts with multiple borders, or make a sewing room sampler quilt using all 13 block designs. Includes:

                          • Charming block motifs, from a button jar and thimble to a rotary cutter, sewing machine, and seam ripper

                          • Special techniques for creating tiny 1/8"- to 1/4"-wide accent borders with precision

                          • How-to illustrations and full-size paper-piecing patterns for each block

A quilting friend who spoke only English took a trip to Europe. How did she get other quilters to walk up to her on the street and introduce themselves? She wore a jacket with motifs from this book!

This is one of the CUTEST paper-piecing pattern books I've seen in a long time. Lots of blocks, lots of patterns and project ideas, and good instructions. I found it absolutely charming! - I've been recommending it to foundation-piecing loving students! If you need something special for your sewing room, or for sewing friends, this one is well worth the cost.
