This book is fantastic! Both my husband and I enjoy cooking and loved spending an evening thumbing through this book over a glass of wine looking up every term we could think of...all were in the book! The book has also added greatly to our dinner party conversations as it offers a bit of historical context for food terms. Quite interesting. I think this book would make a fabulous gift for anyone you know who likes to cook.

Love this book. This book has words I never even heard before.It is the type of book that every culinary student and professional should have with them at all times. Another book I found very helpful were the Study Guide for the National Servsafe Exam and the Study Guide for Baking and Advanced Baking. These books have very good questions with answers and even explanations. All these books can be found under Patrick Leonardi. A very smart and talented author.

WELL WONDER NO MORE!!... this book is the secret behind all of those fancy menus you read in Restaurants and Banquet menus (I should know I have had to create new Catering Menus every year since 1993)LOL
I have been in the Hospitality Industry for over 17 years this book has been in my collection since I started. If you can purchase it get it!! Definitely a must for any Caterers or students of the Culinary Art.
This book contains definitions of almost EVERYTHING Food (and some wines), the correct pronunciation, spelling and it's original origin. I can't recommend this book enough!! It is quite pricey but I have bought it at least 5 times in my career as gifts for my assistants moving on to greater positions in this Industry. They have terms (and again pronunciations) for all Culture cuisines ie; German, Cambodian, Japanese, French, Italian, Middle Eastern and Spanish just to name a few.
I also recommend the Oxford Companion for Food and Wine as well as any "Professional Chef" book from Culinary Institute of America

Impeccably researched information from a responsible author........1996-07-16
Elizabeth Riely has amassed a library of resources (see the enviable bibliography) and has carefully chosen a comprehensive collection of culinary terms for this book.
The cross-pollination of categories is rich, from the scientific to the ethnic, from the technical to the colloquial. Of her knowledge and research capabilities, I'd say she's a force to be reckoned with. With people like Elizabeth Riely and Sharon Tyler Herbst in
this world, rest assured that when a culinary term is needed just fingertips away, we can depend on their talents to give us responsible information.
I also like the pronunciation guides, as I am prone to guessing incorrectly more often or not. For anybody who's into food as more than a hobby, The Chef's Companion (published by the textbook makers VNR, and I hope, available to more than culinary school students) reads like a satisfying novel.
Lick a bookplate and stick it in the front cover of this book; you'll keep it forever.

This is a great reference book for anyone who loves to cook or just has an interest in foods of the world. At date I have bought 12 of them and have given them as gifts to friends arouond the world.

As a professional working in the industry, my yearning for culinary information never subsides. It may very well be insanity that causes me to focus so strongly on my profession, but I'm always reading and watching culinary related books and TV shows. Very often, you'll find that books and television don't always explain certain bits of information as well as you'd like if at all. And even then, their information is sometimes flat out wrong. That's when I turn to this book. It took years of convincing for me to give this book a try, but now it's the only food reference book that has it's very own place on my desk at home.
The book is basically a food related dictionary that describes a bit about history or culinary uses of nearly every culinary item, ingredient, or term. It also has a very helpful appendix that lists ingredient equivalents such as 8oz dry pasta noodles equals 4 cups of cooked, 15 graham squares equals a cup of crumbs, or 1 cup of dried pinto beans equals 2 1/4 cups of cooked. The appendix also lists substitutes for both ingredients and volume, high altitude baking adjustments, boiling points, temperature and metric conversions, oil smoke points and food label terms as well as consumer information sources.
If I'm looking for extremely in depth information on an ingredient or foodstuff, I may open up Larousse Gastronomic. But if I need the quick down and dirty on a cooking term or a conversion of some sort, which is more often than not the case, I grab this book.
Food Companion.......2007-07-09
I think this is an essential for all kitchens. Often, a recipe book will use a term that may be unfamiliar or use ingredients that are regionally unavailable. This book gives clear definitions, offers substitute suggestions and is generally the best resource to have in a "cooking" kitchen. I HIGHLY recommend it. I purchase it as part of a shower gift for all brides.
Love FoodLovers Companion.......2007-07-04
I am a veteran foodservice employee of over 30 years. I purchased the Larouse Encyclopedia Gastronomique in the past but found it to be incomplete and a bit dated. The Foodlovers Companion fills in all the gaps and is very up-to-date. I moved from the casual dining field to fine dining and found many new ingredients and techniques with which I was unfamiliar. I bought the Companion sight unseen on the recommendation of a young chef. I am thoroughly pleased and would recommend this book to all who love the details of the food life.

This book has really helped me at work. All these people talking about imperfections in the book are missing the point. Spanish scholars don't need this book. Regular folk like me are the people who need it. Believe me, this book helps.

This book contains a multitude of little errors and it jumps between the formal (usted) and informal (tu) forms without distiguishing between the two.
It does the job "more or less" if you're in a pinch, but there has to be something better than this out there.

I found this booklet to be outrageously priced, incomplete and not user friendly for a publication intended for use in a commercial kitchen. Any standard English-Spanish phrase book would do just as well.

After 3 years, I still love this book!.......2002-03-14
When I got Kitchen Spanish 3 years ago, I didn't speak a word of Spanish. I really don't know it now either, but I speak to my kitchen assitants every work day using Kitchen Spanish and it works. I guess if I really wanted to learn proper Spanish, I would get a Berlitz immersion program or something, but for me, in my job, Kitchen Spanish works like magic. I don't know what I'd do with out it.

This book has been to France 5 times with me or my friends and resides there now with a neice who has just moved to Provence. It is invaluable in deciphering menus and helping you order what you want to eat ..... no surprises. Wouldn't travel without it and small enough to stash in a pocketbook or a mans inside breast pocket. The only thing better would to be fluent in French!

This dictionary is remarkably useful in restaurants in France. On a number of occasions, while we were in France, our waiters and captains commented that they owned a copy and found it essential to communicating with their English-speaking diners.
Dining in France made easy.......2001-11-10
This is the first thing I pack whenever heading out for France. Even if you understand French, culinary usage can be different than you expect. Outside of Paris, english is not always understood let alone spoken. Even where english is spoken, they may have difficulty truly translating the menu for you. This small pocket sized book is the best dining aid around. Once you actually understand what is on the menu, you can break loose from the Poulet Roti and jump right into the Souris d'Agneau (literally mouse of mutton).

Not what I expected.......2004-11-24
I should have read the editorial review more closely. It means it when it says this is a sweeping survey. Not even close to being a helpful book for buying Hull. I bought it hoping it would be of help when looking through ebay listings. So far, I am batting less than 50% at finding items in this book. Patterns are not complete listings, only 'surveys' as the editorial review says. Patterns are not even always grouped together in the same pages of the book, either. And there is no kind of listing by Hull ID number to be able to find items quickly. Even when they are, pictures show many items in one picture and the description is sometimes confusing as to which piece is what. Labeled pictures of collections are sometimes shown, but not priced, and some of the items show up no where else in the book. I am very dissapointed. On the positive side, the pictures are great, and as promised it shows a wide variety of the types of items Hull made. Prices are right next to each picture, so you don't have to do the annoying 'flip to the back' unless you are doing it to try to find your item in the idex because it isn't with the rest of the pattern on its page! Overall, a nice book to look at and read, but if you are planning on using this for identification and pricing, get something different.
BUY THIS BOOK.......2001-08-16
I am an amateur collector, and I reviewed more than a dozen books on Hull Pottery at several book stores (then, of course, I purchased it from Amazon). This one was by far the best of the lot. Best photos. Best variety of items. Best organization. If there is a better book out there on Hull Pottery, I sure would love to know about it, because I haven't ever seen one. Highly recommended to anyone interested in Hull pottery.
Book a necessity for the new Hull collector.......2001-05-09
This Hull reference is thorough, but certainly not definitive. Synder's photos are vastly superior to those in Brenda Robert's The Collector's Encyclopedia of Hull Pottery. Color quality is better and shows the subtle variations found in the same lines of Hull art pottery making accurate identification much easier for the novice. Prices are also included in the cutlines with the pictures eliminating the need to flip back and forth between the photos and a price list somewhere else in the book. All in all I would recommend this book to any serious Hull collector.

This book is full of traditional and updated charts for fair isle color pattern knitting. Most of the charts are accompanied by a close up photo of a corresponding knitted garment. This would be a great resource for people who design their own sweaters, or use Elizabeth Zimmermann's percentage system.
