The Old World Kitchen: The Rich Tradition of European Peasant Cooking
Elisabeth Luard Manufacturer: Bantam ProductGroup: Book Binding: Hardcover ASIN: 0553052195 Release Date: 1987-09-01 |
Book Description
Within the ken of the kitchen, the most basic elements of history, economy, and geography are carried by hand through time; recipes are records of that transmission, keeping culture in seasoned anecdotes. Such tales, told through many generations, provide the contents of Elisabeth Luard's compendium of European peasant cooking. The more than 500 recipes Luard has collected are emblems of parochial lore and family tradition, of common wisdom and cunning necessity, and they treat every imaginable aspect of taste and appetite. The preparations described here are, as Luard writes, the `mother-recipes' from which all European cookery springs. . . . For most of us . . . they are as integral a part of our past, and of what shapes and nourishes us today, as our literature and songs, our paintings and technology. We couldn't agree more.Customer Reviews:
Great for finding old ethnic recipes.......2007-06-09
Great recipes, but food history beware!.......2003-12-07
A first-rate cookbook with a very nice selection of recipes. I love peasant food and this is a dense book. Now, I can't fact check all the countries of Europe, but I can give you my thoughts on Bulgaria as an example, being Bulgarian-American.
Bulgarian cuisine is given equal footing with all the cuisines of Europe. I even found a recipe I'd been searching for years to find but had just never been able to until I came across this book; one for simple breakfast noodles (not exactly a sexy enough recipe to make the cut in most ethnic cookbooks.)
The bad news? Someone flunked Bulgarian history. If I'd had to read the phrase "Turkish Yoke" one more time I would have chucked the book right out the window. As if Bulgaria was the only country swallowed up by the Ottoman Empire. Greece would be a big one. And, just when did Shopska Salad become a Serbian recipe? The word "Shopska" is the word for those who come from the "Shop" region of Bulgaria (the region Sofia fits in.) The concept behind Shopska salad is that all the ingredients of the salad are white, which is the the color of the Shop people. It's an amazing oversight, to say the least.
Well, just so you don't think this is a misplaced rant from injured national pride, other countries received the same treatment, such as: Just when did Smorrebrod become a Danish exclusive recipe? Sacrilege!
A nice book to own if you can stand slanted history and cultural notes in your cookbooks. It's sad that such a neat collection of recipes would revisit the same old misinformation and stereotypes as any other old book. Why bother doing any research at all?

An interesting and useful addition to your cookbook shelf.......2001-12-29
As a practical cookbook, it is wonderful. Each recipe is clear, concise and easy to follow. Ms. Luard gives suggestions for compatible side dishes and wine, as well as what to do with leftovers. (Did I mention most recipes are meant to serve 6 or more strapping farmers?) Each recipe is followed with suggested substitions, which comes in handy when you do not have sorrel or you don't care for prunes. More than 300 recipes are included, and they come from all over Europe, from Iceland east to Scandinavia, and south to Italy, not skipping a country in between. The book is divided into sections by ingredients, which I find extremely useful. The sections are: vegetable dishes; potato dishes; corner cupboard dishes (beans and grains); pasta, noodles and dough-based dishes; barnyard and dairy; fish and food from the sea; poultry; small game; pork; shepard's meats; beef, reindeer and grilled meats; bread and pastry dishes; sweet dishes; and the rustic kitchen. The last section is a great resource on herbs, mushrooms, oils and cheeses, and how to preserve meats.
There isn't space enough to tell you how great this book is. This is, without a doubt, my all-time favorite cookbook.

Fourteen Families in Pueblo Pottery

Book Description
In 1974 Seven Families in Pueblo Pottery was published to accompany an exhibit at the Maxwell Museum of Anthropology: twenty years later there are some 80,000 copies in print. Like Seven Families, this updated and greatly enlarged version by Rick Dillingham, who curated the original exhibition, includes portraits of the potters, color photographs of their work, and a statement by each potter about the work of his or her family. In addition to the original seventhe Chino and Lewis families (Acoma Pueblo), the Nampeyos (Hopi), the Guteirrez and Tafoya families (Santa Clara), and the Gonzales and Martinez families (San Ildefonso)the author had added the Chapellas and the Navasies (Hopi-Tewa), the Chavarrias (Santa Clara), the Herrera family (Choti), th Medina family (Zia). and the Tenorio-Pacheco and the Melchor families (Santo Domingo).Because the craft of pottery is handed down from generation to generation among the Pueblo Indians, this extended look at multiple generations provides a fascinating and personal glimpse into how the craft has developed. Also evident are the differences of opinion among the artists about the future of Pueblo pottery and the importance of following tradition.
A new generation of potters has come of age since the publication of Seven Families. The addition of their talents, along with an ever-growing interest in Native American pottery, make this book a welcome addition to the literature on the Southwest.
Now in it's fifth printing, this beautiful book illustrates the many Pueblo pottery designs being created today and the traditions that have shaped them.

With its vivid yellows, glowing reds, cool blues, and lush greens, Tropical Asian Style evokes the riches of Southeast Asia. Gorgeous color photos of homes from Chiang Mai to Kuala Lumpur demonstrate essential design elements: living spaces open to nature, and accents of wood, textiles, and earthenware. This is a coffee-table book that will enlighten and entertain with its discussion of local crafts, such as basketware, batik, lacquerware, furniture, terra cotta, ikat weaving, Thai silk, garden sculpture, and more. Its sumptuous full-page spreads--from a saltwater pool above the surf in Phuket to a lovely open-air bathroom accented with old beams and seashells--will beckon you to exotic locales and entice you to add a little Asian flavor (a carved teak daybed, a decorative weaving, or more simply, a hammock on the veranda) to your home. --Jhana BachBook Description
Tropical Asian Style is the first book to showcase contemporary residences throughout Southeast Asia-from Chiang Mai to Bali, Kuala Lumpur to Java. Featured are houses in more than 20 different locations in Thailand, Malaysia, Singapore and Indonesia.Customer Reviews:
fabulous ideas for open-air living.......2001-07-28
I didn't read much of the text because the pictures were so captivating. They show every aspect of the tropical Asian house, except perhaps kitchens, which seem to be nothing more than a stove-type device near the dining area. The predominant theme is living among nature and even inviting it to share the living space with you (or is it the other way around?). Instead of windows and doors, you see slatted screens and netting. Very romantic. And a far cry from most of America's obsession with locks and glass. I need to move......

Truly Gorgeous Overview of Tropical Asian Luxe.......2000-08-28
It is not a detailed exploration of regional design elements (look to Bali Style, Thai Style, Tropical Garden Design, et al, for the next degree of depth). It is, however, a rich overview of the best of SEAsian luxury architecture and furnishings.
Every page is simply gorgeous, with photos "bleeding" out past the paper, one trait of a good coffee table or style book. There is little or no image repetition in the coverage of the homes or boutique hotels featured, and each photo is perfectly focused, every composition seen in its best light.
In all the shuffle of Thai grandeur, Balinese earthiness, and Malaysian simplicity, the book might at first glance seem to be presenting a kind of fusion. I think it's fair to say that there is plenty of contemporary blurring of the distinctions between regions, but the reader can also look for regional elements and quickly learn them. Each property is given its own mini-chapter, which helps a lot. And the regional details and sensibilities really come alive when you read the accompanying texts, which are the work of expert style writers.
In fact, the contributors list reads like a who's who of style gurus. There is the clever and quippy Made Wijaya, descriptive Diana Darling, the meticulous William Warren, and details-minded Robert Powell. It's a great read!
Definitely some of the best of Southest Asia..........2000-05-18

General plans & photos of contemporary homes in tropicalAsia.......2001-03-24
It is something of a showcase for several Asian architecture firms, and the range of style is remarkably wide. Powell gets into the philosophy behind each design, discussing such matters as flow, function, exploitation of view or site features, use of vernacular, even local religious or cultural beliefs. Each house (total: 27) has its own chapter, with several good photos, general plans (!), elevations, and an essay about the structure and what each architect was expressing. While the text is sober and without fluff, reader can find in it a pleasing sense of respect for land, nature, materials, culture. (One disgusting exception: the photo of a room in a Thai house which contains several tiger and other exotic animal skins on the floor)!
If you are working with an architect and want to produce a certain effect, this book offers real solutions and helpful possibilities. Amazing variety.
