ESSENTIAL FOR BAKERS.......2007-10-09
I first came by this book when I was a student of baking, pastry and baking technology. Having no money to buy it(it used to cost too much then for my student pocket) I borrowed it from the library and photocopied it. A few weeks ago finding that the price has dropped significantly I ordered it. So why would one buy a book (again) since one has it (even as a photocopy). Because it is so blessed good! As a matter of fact there is hardly any book like it in the market. 'BREAD' by Jeffrey Hamelmann is also a great book (better) but does not have the gloss pages or multitude of photographs as this one. The same goes for 'The taste of bread' by Calvell.
This book gives you a lot of information on the processes and methods of breadmaking. Each recipe is detailed and not all the methods are the same for all the breads as in other books. The book deals with poolish preparation and use, the straight method of bulk fermentation but in a way that makes tasty bread, Levain (Sourdough) breads, Viennoiserie (Brioche, milk bread etc. It also includes a large section on artistic bread decoration something that is rearly (almost never) included in baking books. But the real gem in the crown is the section on Croissants. You do not know proper croissant production unless you read it. Six different methods of producing croissants, from the straight method, to the slow rising method, to the levain method. Absolutely great. With this book and a little help from a French baker I worked with briefly, my croissants look and taste as if they came out of a traditional Paris bakery (I use the overnight rise method).
A few last details. This book is for professionals not home cooks (unless they are very experienced). It is actually part of a series that was designed to be a top quality bakery apprentice's book (unlike the unfortunate Reinhart books).
The book is in Metric and Formulas and uses somewhat large quantities.
There are colored photos throughout and they don't look as dated as another reviewer has said.
At this price it is a bargain for the proffessional and the apprentice.
Top Quality Bread Book.......2007-03-13
This is actually Volume Two in a series. The first volume is similar, of the same name, twice the price and out of print. This one is outstanding in that it contains a reasonable array of classic breads that are presented in an optimal format with beautiful color pictures, commentary and good organization. Although it may be a bit too detailed for the average home baker, if you follow the recipes and techniques exactly, you will get bread that looks like those shown in the pictures. The weakness is that it doesn't always explain how to achieve these results in a hoome environment. For instance, to achieve the shiny patina of the breads shown on the cover you need to inject steam at the start of the baking. Although there are a number of ways to do this at home, none are explained here (You can pre steam the loaf in a roaster in advance). Other techniques are available, but not here, for producing large irregular holes, a lasting crust, etc. For my taste, instead of a book about how to make such and such kind of bread, I would have rather had a book about how to achieve certain textures and patinas in bread baking in general. Nevertheless this is an outstanding book well worth the price, possibly the best on the market!

I found this book excellent, with lots of information about developing flavours and aromas. This book has been written for the professional baker working in a small bakery. Recipes range in size from around 16 kg of dough (not flour) for breads where several different shapes and sizes are scaled off the one mix, to smaller quantities for brioches, croissants etc. There are lots of descriptions for various shapes and sizes of bread from different regions, but using the 3 or 4 basic dough types.Therefore you can make say two larger basic doughs and produce easily 2 dozen varieties.

I was a little disappointed with the presentation of the recipes. They appear to be written for use by a large-scale bakery, i.e. for the production of "dozens" of loaves, making it difficult to produce a small number of baked items. Armed with a calculator, one has to reduce each recipe many times in order to do that.And there are sometimes directions left out as well. Definitely NOT a book for the amateur baker! The photos appear to be taken in the 1960's, and pictures of final products are not very appetising.

If you are a seasoned bread baker, manager or owner of a small neighborhood bakery, this book is a must-have. It has hard to find information that will be extremely useful to you. This book is a valuable reference for professionals.
The first 30 pages is formal information on bread making techniques and ingredients in the professional bakery (e.g. base temperature calculations).
It has almost 50 recipes for specialty and flavored bread. These are extremely profitable, as they represent bread you can charge more for. If you are already doing standard breads, you should be able to do all the breads in this section without any additional difficulty. In addition, they will allow you to present good variety to your customers. The recipes are geared for about a dozen loaves, just about right for a neighborhood bakery.
It presents about 2 dozen different bread shapes that you can mostly apply to breads you are already making.
The second half of the book is devoted to bread sculpture, for those who feel artistic or who need a start for a professional competition.
A book for the professional bread baker........1999-10-23
This book is an excelient book for both professional and student bakers. Not only does the book introduce the basics of bread baking, it also goes into the chemistry aspects of baking. This wonderful book offers a number of fasinating pictures that show many diffrent folds, rolls and techniques of developing dough. I highly recomend this book for someone who is interested in becoming a professional baker like myself.

This book is absolutely amazing, although it is geared towards the professional baker. There are great photographs of some of the decorative pieces, as well as helpful charts and tables. There are recipes for a number of unusual breads, as well as how to form animals, letters, woven bread baskets, wagons, and many other unusual and impressive breads. This is a great book for anyone interested in the nitty-gritty on bread-making and bread-shaping.

Good resource for exceptional pieces, but it's not organized well, and does not cover most everyday pieces. Values are over-inflated, especially for what milk glass is selling for online.
Museum Pieces Only .......2005-11-08
I pick up a lot of milk glass in thrift stores and was hoping this book would help me identify some of the pieces. Unfortunately, most of the items in this book have long been unattainable to the casual collector. The informational section was too short and poorly researched, and the author virtually ignored contemporary milk glass from makers like E.O. Brody, Anchor Hocking and Avon (only a few of Avon's dozens of milk glass pieces were featured).
If you want a book about milk glass from 1950 to present, this isn't it. Hopefully someone will realize the need for a book that covers "common" milk glass, which is getting harder to find and will ultimately be tomorrow's collectibles.
Research, Research, Research!.......2004-05-05
This book helped me identify unmarked pieces of milk glass with its extensive display of pictures and patterns. The book is fairly organized and covers many manufacturers that are not so well known.
The only drawback was some pictures were not clear enough to carefully identify a pattern. This is only constructive criticism and should not keep you from using this book as part of a reference and identification guide for fine pieces of milk glass.
A Tall Drink of Milk Glass!!.......2003-04-27
I picked up the latest edition of this book recently and learned alot in just a few glances. I have been collecting this wonderful form of glass along with Depression Glass and Art Glass for quite awhile, and have accumulated several books on the subject (see my other reviews).This one, unlike some others, has not disappointed me at all. There are wonderful pictures and lots of information. I do prefer price values to appear on the same page with the item and the maker/pattern. I would say that is the only fault here, and perhaps some more commonly found pieces would be helpful to know about too.Still, this is a must for anyone interested in Milk Glass and it's origins, plus information on some of the better pieces to be looking for. I personally enjoy seeing my pieces appear in books, as several are in this volume. Nothing like pointing to a page and saying "I have THAT TOO!!" That said, this book is well worth a spot in your glass reference library.

Many of the great scenes from the Old Testament and many more from the New Testament are included, besides the Stations of the Cross and portraits of the saints.
The work of an unidentified Dutch master painter, the manuscript was made for Catherine of Cleves on the occasion of her marriage to the Duke of Guelders. All the 157 surviving miniatures are reproduced to actual size and in exquisite color with gold, together with three samples of pages containing the Latin prayers. Page after page reveals the elaborate program and rich illumination of the original. The progression from beginning to end shows an artist increasing in skill, relying in his earlier work on tradition and later emerging as an independent artist of bold, clear colors, dynamic brushwork, and lively imagination. He stands as one of the supreme painters of fifteenth-century Northern Europe.
Each page is accompanied by a descriptive and explanatory commentary by John Plummer. His introduction discusses the development of the Book of Hours as a liturgical form in general, and the history of the Cleves Hours specifically, and describes the place it holds in the history of Northern painting. 160 color illustrations with gold.

I am a re-creator of medieval illuminations for modern use. This reference contains some very interesting illustrations in the borders, scenes of people working, and charming little references to tools and such. I'm enjoying this book as a source of inspiration for my artwork.
great art work, but no translation.......2006-09-29
considering this small book is printed at the orignal scale, the details are astonishing. the printing quality delievers the art work right to your hands. it is a superb full color reproduction. the introdution is an indepth study of the history of the two original copies and the process of reconstruction of the book. the related history, manuscript making of the time are well studied.
however, the published book does not translate the Latin text in to any language i can understand. but, i guess, the text is just explaining what the picture is, which the editor always gave a longer explaination paragraph for every picture in the book, in modern eyes.
this is one of the best reproduced manuscript available today.
Transcends Its Genre.......2003-09-24
One doesn't need to be Christian to fall in love with this book. Each tiny painting is rich in detail and imagination. There is not one careless or unnecessary brushstroke. The artists who produced this work did the very best in their power and each image glows with their intention. There is a wonderful awkwardness in many of the human figures, but the natural and imaginal worlds are depicted with loving fidelity. This is religious art that stands with miniatures from India and Persia as some of the greatest art ever created for an intimate scale.

A Surprising Little Book.......2005-07-18
This small treasure was an impulse buy, mainly because the cover picture was attractive and the pricing very affordable. The designs inside carry a theme of elegant simplicity throughout the pages. The arrangements can be easily duplicated by the layman and provide great idea seeds for the seasoned florist. A nice book to have whether for the novice or the professional floral designer.
It just goes to show you that price is not always an indicator of quality.
