A Classic Author on his Adopted Speciality.......2003-11-13
There is something droll about seeing Pierre Franey, the former executive chef of La Pavillion, classically trained French native doing books of quick cooking. It suddenly started making sense to me when I read that Franey was employed as the head of the Howard Johnson's research and development kitchen in the 60's before going to his gig as a culinary columnist for the New York Times. The credentials of this chef, along with my interest in preparing good food quickly lead me to buy this book shortly after it was published in 1989.
Franey is especially qualified to write recipes with this slant due to his long service at the New York Times column devoted to quick cooking.
Like some modern writers on fast cooking such as Rachael Ray, I believe Franey does alter classic recipes such as pot a feu to get them done faster, but mostly selects those recipes which can be done in less time. There are some exceptions to this such as Pierre's recipe for Chile con carne, typically a long cooking dish. I have prepared this chile many times over the last 12 years and at one time I thought it was very good. Now, after being exposed to some of the more authentic, classic southwestern recipes, I find Pierre's recipe merely a good expedient. Pierre also does not limit himself to the cuisines of western Europe
On the other side of the coin, I find that this book contains many bonus features on techniques which one would not expect to find in a book with this slant. For example, it covers the always challanging method for dealing with an artichoke and a method for charring the skin of a sweet pepper.
This is a very good book for the novice, occasional cook, as it was for me when I first purchased it. The only warning I have is that being short does not always mean easy. A novice cook may find himself challanged by some of the preparations and find yourself taking much longer than an experienced chef.
If you are a serious foodie who dotes on Paula Wolfert and Diana Kennedy, you can skip this volume.

I love this book, and I'm about to order one for my daughter. I've used the book for over five years and have tried about half the recipes. All are consistently good and are quick and fairly simple.

Pot-au-Feu, Parsleyed Rack of Lamb, and Grand Marnier Soufflé are indeed classic French dishes, but do they belong in a book with "Rapide" in the title? Certainly, says Pierre Franey, longtime author of "The 60-Minute Gourmet" for The New York Times, proving in more than 250 recipes that quality and short order can go together as a "style of home cooking that is efficient, accessible, and refined." This volume is practically an encyclopedia of French country classics--except that every dish is designed to cook in no more than an hour. (Truth be told, a handful exceed the 60-minute mark, but the vast majority can be prepared in a flash.) Clear, detailed instructions will appeal to both the seasoned cook and the novice. Sixty-five line drawings describe tips and techniques from trussing poultry to preparing artichoke bottoms to making tomato roses. Franey's French background comes through in dishes such as Country-Style Pâté, Cassoulet, and Breast of Chicken Bonne Maman (which takes, from start to finish, less than 30 minutes to prepare). But he wrote this book after almost 50 years in America, so his understanding and appreciation of America's melting-pot culture and its favorite ingredients is well represented by such dishes as Lamb Curry, Veal Scaloppine Milanese, Mexican Posole, and Pork Chops with Fresh Cranberry Sauce.
Many of Franey's recipes begin with a short explanation of where or why he first made the dish. He begins his recipe for Sautéed Trout with Lime, for instance, by describing a sudden craving for trout he experienced one day and the lengths to which he went to find a fresh fish. Often he includes tips and tricks to make preparation even easier. In Skate with Black Butter Sauce, he warns that a skate's wing-shaped fins have many long bones, but shows how they are easily removed. These introductions, plus the fact that every recipe uses easy-to-find ingredients (and it's usually a short list), make this book read more like a treasured inheritance from a favorite uncle who loved to cook than a "Classic Cookbook" written by someone most of us never had the privilege of meeting. --Leora Y. This is a very well done book, and I enjoyed it very much. It has nice projetcs that you really can do by yourself. The pictures are wonderfull, and full of great ideas and details. The instructions are so clear, so anybody can understand easly.

Good book for the home improvement weekender.......2005-04-21
I bought Sunset's "Complete Masonry" because I am thinking about using concrete for my next kitchen counter top. I had heard on a radio home improvement program that concrete kitchen counters are popular in some other countries. Complete Masonry has one chapter on concrete counter tops, but the example they give is an outdoor barbecue, not a kitchen. The techniques can be adapted to a kitchen, but it's not the same as having illustrations of specifically what I want to do.
Other than that, Complete Masonry has lots of information for the home gardener or handy person. You get pictures and details for laying out and construction of walks, stairs, patios, walls, ponds, rock gardens and all kinds of decorative and imaginative masonry work around the home. It's aimed at the home improvement market, not for the professional mason, although a professional might get some creative ideas from it's illustrations. Complete Masonry starts with very basic teaching such as "what is a shovel" and works up to include all the details you would need to construct the projects in the book. Like a lot of Sunset books it's full of ideas and examples of very elaborate projects, though the projects appear to have been done by skilled professionals. Even so, with a little practice you could probably finish any of the projects if you have a little construction skill and are willing to do the work. It's a good idea book, and a practical how-to home improvement book.

Sunset has published several books on this subject, 3 of them called "Complete Masonry" with different subtitles and a basic one, possibly others. This is the only one that I've actually gone through cover to cover and it is superb. I have the Black and Decker flavor of Complete Masonry too and this one is far better at 1/2 the price.
The projects described are quite a bit more appealing than the B&D's plain cookie cutter boring wall and walkway offerings. More importantly this book offers better techniques of design that can be applied to your own unique design.
Another of my favorites on the subject of concrete that is also applicable to walls, walkways, flooring or whatever else you wish to conjure is a book called "Concrete Countertops: Design, Form, and Finishes for the New Kitchen and Bath" It actually offers much more than what the title leads you to believe and suggests concrete as a very versitle replacement for standard brick and tile uses of the past.
