Book Description

In Europe, the Basques are known for their creativity in the kitchen and their long-enduring culinary heritage. In the Spanish Basque country itself, food and eating are the center of everyday life and the focus of endless conversation. Basque women lovingly pass on their cooking techniques to daughters and granddaughters, and Basque men, who belong to traditional cooking clubs called txokos, themselves enjoy lingering over stove and table.

Amazon.com

Few people have stayed in one place as long as the Basque people have stayed in Basque Country, which spreads from northern Spain across the Pyrenees into France and stretches out to the sea. Basque Country has remained intact from the time of cave paintings to today. The Basque language is a language unlike any other; even Basque DNA is different from any other European DNA. So it should come as no surprise that the food of Basque Country, while similar to what is found in other parts of Spain and France, is distinct as to its place and people of origin. Restaurant owner and chef Teresa Barrenechea invites one and all to come sit at the Basque table and learn while enjoying.

Though nueva cocina has invaded Basque cooking, Barrenechea has intentionally left it aside for another book. She cleaves to tradition in The Basque Table, to the pinchos (like tapas), first courses, and main courses that make up the traditional meal served in Basque homes. It is a deceptively simple cuisine, something of a tightrope act, that demands of any cook the ability to select the best possible ingredients. When, in a dish like Chuletitas de Cordero (grilled lamb chops), you are only working with the chops, olive oil, garlic, flat-leaf parsley, and salt, there's no place to hide. And yet, when everything is exemplary and the chops come off the grill at the perfect moment, the effect in the mouth and in the heart and soul of any diner will defy description. A tough kind of simple, in other words.

A fierce pride shows in Barrenechea's recipe descriptions and food notes. She holds herself to the highest cultural standard. What she aims for and achieves is a replication in print, with an American kitchen in mind, of exactly how a certain dish should taste to the Basque palate.

So take heart in dishes like sweetbreads with garlic and parsley, crayfish in hot sauce, mushrooms with scrambled eggs, white bean stew, roasted fresh ham, chicken Basque style, fresh cod with red and black sauces, grilled prawns, and trout Navarra-style. You may be cooking at home, but you'll be sitting and eating at a Basque table. And there's no other table quite like it. --Schuyler Ingle

5 out of 5 stars One of the best cookbooks I've bought in a long time!!.......2007-03-20

This is without a doubt one of the best cookbooks in my collection. At the risk of sounding cliche, I have to say that every single recipe in it that I have tried has been a mouthwatering success ~ and the first week I owned it I tore through at least one recipe a night. If you're interested in traditional Spanish / Basque cuisine, as well as the culture behind it, this is the book for you. I highly recommend it!

4 out of 5 stars Very Good Colection of Regional Recipes........2006-06-16

`The Basque Table, Passionate Home Cooking from Spain's Most Celebrated Cuisine' by restauranteur / author, Teresa Barrenechea, with Mary Goodbody, is different from most of the best known studies of regional European (especially French, Italian, and Spanish) cuisines written primarily by (except for Paula Wolfert) culinary journalists such as Coleman Andrews (Catalonia, Spain; Riviera, France and Italy), Arthur Schwartz (Campagnia / Naples, Italy), Lynne Rosetto Kaspar (Emilia-Romagna, Italy), and Fred Plotkin (Friuli-Venezia Giulia, Italy). And, almost all of these authors, especially Andrews and Schwartz, give very detailed little histories of their subject regions. They also take an analytical approach to their subject, spending much time on the region's `terroir'. They also happen to concentrate on restaurants as sources, since, as Andrews states, these are much more accessible.

Barrenechea's approach is different in almost every major aspect. She is a professional cook, yet her recipes are specifically drawn (see subtitle) from `home cooking'. In this way, she is most like Wolfert; however, she is not on the same level as a scholar as Wolfert, as she offers us few historical or analytical insights into the cuisine of her home region, the three provinces in the Northeast corner of Spain, east of Galacia and west of Navarre, and North of Castile. While this is the home of one of Spain's four national languages (per Andrews), and while the Basque region has a long history of being in semi-permanent revolt against the government in Madrid, Barrenechea tells us nothing of this. The most real local color we get is from an adoration of the new Guggenheim museum in Bilbao, the capitol of the Basque region.

The first thing which struck me about the recipes in this book is that when compared to, for example, Coleman Andrews recipes for similar dishes, such as the famous `tortilla Espagnole' (potato frittata), Ms. Barrenechea's recipe was more detailed and seemed far tastier, as she includes onion which Andrews leaves out (per Catalan practice!). Unlike the very analytical approach, the book is organized in a very traditional fashion, by the three courses in the typical Basque midday and evening meal. This makes the book much more useful if you happen to be of Basque descent, and you wish to emulate the foods of your homeland.

The next thing I notice is that Ms. Barrenechea does a lot of drawing outside the lines. Many of her recipes are unflinchingly attributed to regions outside the Basque area, especially, southern France, Navarre, Galacia, and Castile. This casts serious doubt on the claim that Basque home cooking is `Spain's Most Celebrated Cuisine'. I suspect that at least three other regions, Andalusia, home of Sherry and Tapas, Valencia, home of paella and rice growing, and Catalonia, home of Spain's most famous restaurateurs, can lay claim to being Spain's answer to Italy's Tuscany or France's Burgundy region.

The most interesting generalization about Basque cooking is that it has its own special twist on the notion of `tapas'. Where most of Spain uses these snacks as edible lids on their sherry glasses, the Basques call their bar food `pinchos' and prefer to nosh on them from skewers. Even the ubiquitous `tortilla Espagnole' isn't sliced in wine glass sized wedges, its sliced into cubes and threaded onto the skewers. The second most interesting generalization is that the meat of choice to Basques is BEEF! This makes the book a welcome choice to American beef lovers who want to dabble in an authentic European cuisine. Unfortunately, Ms. Barrenechea does little to explain how a region surrounded by French and Spanish centers of pork culture would adopt a bovine cuisine. That is not to say there are no other animal proteins present. The Basque cuisine is as much in love with game dishes as virtually every other provincial region in Europe. And, both lamb and pork are present aplenty.

After having gotten used to Coleman Andrews' giving us names of dishes in both Catalan and Castilian (our high school Spanish), I am just a bit disappointed that Ms. Barrenechea gives us only the names in Castilian.

Oddly, there are no recipes for bread or noodles. There are also few rice dishes, with no comment about this fact. There are a fair number of dishes which use bread, so from where does this bread come? This is not Paris, with a boulangerie on every street corner. This is another little absence that has me consider this just another cookbook and not a serious study of a regional cuisine. One can learn more about what distinguishes Basque cooking from the rest of Spain from Penelope Casas' book, `Delicioso!', which calls the Basque and Galician lands the `Region of the Sauces'.

For anyone who wishes to cook Basque, this is an excellent and authentic source of recipes, but it is not a `study' of the Basque cuisine.

5 out of 5 stars An impressive collection of master-chef level recipes.......2002-11-05

The Basque Table: Passionate Home Cooking From One Of Europe's Great Regional Cuisines is an impressive collection of master-chef level recipes compiled by Teresa Barrenechea and arranged with the assistance of Mary Goodbody. Basque cuisine is an amalgam of diverse culinary influences including Tuscan, Sicilian, Burgundian, Provencal, and Spanish. From Pincho de Bonito Picante (Spicy Tuna Pinchos); Txangurro Donostiarra (Spider Crabs Donostia-Style); and Solomillo de Buey con Pimientos Rojos (Grilled Filet Mignon with Roasted Red Peppers); to Codornices in Salsa de Chocolate (Quails in Chocolate Sauce); Trucha a la Navarra (Trout Navarra-Style); and Higosy Brebas con Natillas (Figs with Natillas), The Basque Table offers exotic, palate pleasing dishes that are deliberately designed and presented so as to be thoroughly "kitchen cook friendly".

4 out of 5 stars An excellent overview of Basque culinary tradition.......2002-05-26

"The Basque Table" author Teresa Barrenechea asserts that the Basques are even more enamored of food and cooking than the French. There is a strong seafood tradition here, as well as a hearty embrace of meat. A recipe for roast suckling pig is given, not to mention recipes for oxtails, braised rabbit, venison, and sundry organ meats. I didn't happen to have a suckling pig handy, but the pinchos (like Spanish tapas) I made from these recipes were yummy.

Co-author Mary Goodbody is, as I understand it, adept at putting non-American cookbooks into American terms for ease of use. If that was her job here, she did it superbly. There's nothing the average (or even slightly less than average) American cook can't try in "The Basque Table."

As for complaints that the book shows too much Spanish influence, all I can say is get out your globe and take a look. The Basques live wedged between Spain and France so it's entirely natural that their cuisine would be heavily influenced by those two countries. The beauty of the Basque cuisine is that it plucks what it likes from Spanish and French cooking and makes it wholly Basque.

2 out of 5 stars NOT ALL AUTHENTIC BASQUE RECIPES.......2001-09-11

I bought this book when it first came out and was so happy to see a book on Basque cooking (there are so few written in English) and I was also influenced by all the 5 star reviews on this site. Well, after reading it carefully and preparing several recipes I feel let down. Not all the recipes are authentic Basque dishes - many are traditional Spanish dishes. Several recipes were quite bland and I can only imagine that you'd have to import the ingredients from the Basque country in order to get the results that Ms. Barrenechea describes. I am very dissapointed in this book and can not recommend it.

Customer Reviews:

5 out of 5 stars My little pony collector's Inventory.......2007-07-25

Awesome book, very helpful when you already know your pony's name. Very thorough listing of all items to make complete sets!! I use it with my other book "The World of My Little Pony" which has pictures to help identify ponies that you don't know names of.

2 out of 5 stars Well-organized yet error-ridden guide to MLPs.......2007-04-30

The "Complete Checklist," unfortunately, is very disappointing. It certainly would be helpful for beginners who have little idea of how ponies fit into sets; however, this information is available for free online. The primary disappointment is the staggering number of errors. I opened the book and immediately found dozens of ponies listed with the wrong ribbon colors and the wrong types and colors of brushes. Petty stuff, yes, but the whole point of the book really. And I only really know years 1-3, and there are TEN years of original MLP, so imagine how many errors I didn't even catch. Ms. DePiano is no expert in my opinion, despite her alleged lifetime of MLP lovin'.

5 out of 5 stars Exactly what the title says..........2006-10-30

This is a great book to use as a complete checklist of the ponies from the US. My only problems with it are that I wanted a little more. While the book is exactly what it says it is, it would be nice if there were pictures. If not of the ponies, than of the brushes and accessories. And, ideally, it would be nice to have a price list. But other than that...I think this book is great!

3 out of 5 stars a disappointment... i expected more.......2006-07-26

I was excited to find a collectors checklist for ponies but a little disapointed when it finally arrived in the mail. There are absolutely NO pictures, sketches, etc of any ponies whatsoever. The checklists seem a little incomplete and there isn't much of a description of each category listed.

To be honest the disapointment is really my fault bc the book is exactly what the title is: nothing but a checklist-- i'm not sure how complete though-- but if your a MLP collector there are some websites with checklists you can print out and pictures of each pony and extreme detail to each one. I would recommend saving your money or trying another MLP collector's guide.

4 out of 5 stars Must have book if you are serious about MLPs.......2005-11-11

An excellent book for me - an enthusiastic but amateur collector - helps put all the collection into excellent order. Book is great - certainly pictures or even line drawings of items (combs etc.) would be even more wonderful! Highly recommed this book to all MLP collectors!

Customer Reviews:

2 out of 5 stars Not good for anyone over XL .......2007-09-17

I got pretty excited about the title--however, when I got this book I noticed that a majority of them were for sizes starting with small (modeled on thin girls)and there were a larger amount that topped out at XL. The prettiest sweaters are not for anyone over a large. If it was plus sized, why were small patterns even considered? Save your money if you are looking for plus sized patterns.

4 out of 5 stars Family Circle easy knit and crochet.......2007-03-30

I got the book and thumbed through it a bit. The pictures do help; however, I would prefer to see the schematics/charts right next to the pattern instead of most of it being continued at the end of the book. It has a very good variety of sweaters I would wear; additionally, it includes some sweaters for men.

5 out of 5 stars Great selection of Womanly sized knits!.......2007-01-14

This book is wonderful. It has a great range of styles for different body types and has something to flatter every figure, in the average woman's range. The patterns are wonderfully written and pictured in this book. The skill levels required for the patterns range from the easy to the experienced with a good number being intermediate but still easy enough to follow that a new knitter could attempt it. For these reasons I love this book and have recommended it to my friends who have purchased it as well!

1 out of 5 stars That's great, but...crochet?.......2005-08-05

Listen to the crocheters who picked this book up only to find the one truly awful shawl pattern. The title is definitely misleading and the lack of crochet patterns was a sad disappointment. If you're really curious about this book, find it at your local library or get it through interlibrary loan. Nothing here for the crochet enthusiast.

1 out of 5 stars Crocheters beware!!.......2005-07-16

I was very disappointed in this book. Out of 48 patterns only ONE is crocheted and it is a very ugly shawl that resembles a big spider web - there wasn't even the obligatory granny square vest. However, if you're a knitter there are a few nice looking sweaters that might make this book worth your while -- quite a few are rated for beginners.

Book Description

Clean, healthful, sparkling water - that's what a backyard swimming pool is all about. Professional pool maintenance crews can keep a swimming pool clean and its water crystal clear, but they cost a small fortune. Yet many pool owners who try the do-it-yourself approach find themselves plagued by a host of troubles. Cloudy water. Algae sprouting on the pool's walls and bottom. Pumps, pipes, and other equipment that corrode and deteriorate at an alarming rate. Funky odors.

That's where WHAT COLOR IS YOUR SWIMMING POOL? steps in. This classic time-tested resource for pool owners is back in a completely rewritten edition and with a new author. Alan E. Sanderfoot has updated the text to spotlight the latest swimming pool technology and has greatly expanded the range of information about hot tubs and spas.

This easy-to-use, easy-to-understand resource teaches pool owners everything they need to know about keeping a pool or spa beautiful and healthful. Sanderfoot starts with basics: water treatment and filtration systems. Then he moves on to the nitty gritty of how to select and care for filters, pumps, motors, and heaters. He explains the best way to clean a pool, how to make minor repairs yourself, and what to look for in pool covers and such pool accessories as automatic water monitors.

You'll find step-by-step directions for winterizing a pool, and for opening it up again in the spring. There is even a chapter on inexpensive things the owner can do to give the pool a face-lift. WHAT COLOR IS YOUR SWIMMING POOL? demonstrates how a little investment of time throughout the swimming pool season can prevent major problems and expenses down the road.

4 out of 5 stars Good advice for pool maintenance.......2007-09-15

This book quickly answered some vexing questions I have had for some time concerning the correction of imbalances in my pool water. It clearly explains what steps are needed to put things right. Good value for money!

3 out of 5 stars Basic but good.......2007-08-16

Middle of the road. I preferred the Ultimate pool guide, but as a newcomer to pools this book also helped me understand a lot.

5 out of 5 stars Layman's Guide.......2005-08-11

This book was written in layman's terms. Everything was explained in easy to follow step by step directions. I feel much more in control of my pool after reading this book. I will definitely keep it around as a reference book.

4 out of 5 stars Good Introduction To Pool And Spa Maintenance.......2005-07-16

I own a home with a large spa in the basement. When I purchased the home, the spa was not filled with water, and since I had no experience maintaining pools or spas, I read this book to give me some general operating tips. Although the book is not written to explain details concerning all complex pool and spa maintenance procedures, it is an excellent introduction for the novice pool or spa owner.

It is true that the author sometimes refers the reader to a trained pool professional, but I think that is appropriate given the range of possible complications. He also recommends getting a periodic professional water analysis (most pool shops will do this free or at very reasonable cost) as the chemical sticks are good for only fairly basic information. One of the strengths of the book is the explanation of the basic applied chemistry involved in pool maintenance.

After reading this book and getting a water analysis, I have been confidently enjoying the hot tub. Overall, I recommend this book for all pool and spa owners, especially novices. People with a lot of experience with pools may desire a more advanced text, but I think this one works great for probably 99 percent of the pool and spa owners out there.

5 out of 5 stars A fine homeowner's guide to maintaining a trouble-free pool.......2004-03-10

This updated third edition provides a fine homeowner's guide to maintaining a trouble-free pool, spa or hot tub. The updated edition has been completely revised and covers everything from water safety and treatment options to solar heating. Spas and hot tubs are also included in this edition, making it an excellent, practical owner's guide.

Product Description

If you are a pool owner, you have made a major investment and proper swimming pool maintenance is an absolute must! Keeping your pool clean and maintained should be a top priority since a clean pool is essential in many ways. First, no one wants to swim in, or look at, a dirty, green, or yellow pool. Keep in mind that although the pool may look clean, it may in fact be still contaminated with enough bacteria to cause sickness. If a pool is not maintained properly it can get very expensive to clean or fix at a later date. Dan Hardy has used every available resource in his 20-year career as a pool professional to add to his store of knowledge about making and keeping water safe. An untiring and dedicated "Pool Doctor," he has become the "go to" man for owners of some of the world's largest, most ornate, and expensive private swimming pools including that of award-winning actor Mr. John Travolta and his wife, Kelly Preston. Dan started working on pools as a boy in his dad's firm. Not content with doing routine maintenance, he began learning all he could about chemicals, mechanics, and safety. In this book he may just be a lifesaver to pool owners who want to save money on maintenance but need to know how to handle poisons safely. Pool maintenance business owners will want to have this book on hand as an easy guide to repairing filtration and pumps and dealing with serious pool problems. And anyone who wishes to have such a career could have no better mentor than Dan Hardy.

Customer Reviews:

5 out of 5 stars The Only Reference You Need.......2007-10-06

At 288 pages, plus a set of color photos, this book certainly lives up to its claim of "Complete". After reading just a few pages, it is obvious that Dan Hardy has not only the experience to talk about every aspect of pools, but also boundless enthusiasm and interest for the topic, and it's easy to get caught up in his passion.

The book starts with a detailed look at the types of pools and equipment. The next sections describe water and its many properties, and then all the possible additives that are available. Just when you think that you couldn't know any more about the science of looking after a pool, there is another chapter dealing with algae and other problems. I now know that there are 20,000 different species of algae! My pool in Arizona had some persistent recurring issues, and if only I had had Dan's book then, I would have been able to solve the problems which the local pool shop had no answer for.

The book also covers comprehensive maintenance procedures for pool and equipment, details of heaters, and winterizing procedures. It includes spa maintenance, and highlights the similarities and the differences from pool upkeep.

Throughout, Dan emphasizes the safety aspects of only tackling what you are confident doing. At times, it appears that the book is more a manual for the professional, as Dan recounts situations that he has encountered and gives examples as warnings; but it doesn't hurt to know more than the average owner, and this book will tell you more than you ever imagined about all aspects of having a pool. With a conversational and readable style, I recommend this book as the only reference that you will ever need to be able to tackle all aspects of your pool maintenance and servicing.

5 out of 5 stars They aren't kidding when they say "complete!".......2007-09-13

The Complete Pool Manual is the definitive guide to all things pool-related, covering every aspect of pools and pool maintenance imaginable. The author's love and knowledge comes shining through, especially when making references to a pool being like a child in need of time and attention. If you were a pool, you'd clearly be happiest in Dan Hardy's backyard.

Because of the detail and enormous amount of information, the manual would seem most beneficial to pool maintenance business owners - a "must have" for new employees, perhaps as part of initial training. As a layperson, you may find yourself skimming through some of the more advanced chapters, such as those related to the mechanics of the pool and specifics on chemicals, however, it's a great handbook to have on standby, especially if you run into a problem and need to know the basics, such as "what does THAT valve do?"

5 out of 5 stars A Good Addition to the Do-It-Yourselfer's Bookshelf.......2007-09-04

Pool owners and pool maintenance professionals alike will find a wealth of knowledge in The Complete Pool Manual. The purpose of the book is twofold: to give homeowners all the information that they need to properly care for their pools, and to give service and maintenance people a basic guide to cleaning, repairing, and maintaining pools. Throughout the book, Dan Hardy stresses the potential dangers of the chemicals in use, and emphasizes care and low-cost maintenance methods. The book is written in an easy-going, conversational style that gives the reader the impression he or she is talking with a handy uncle about maintenance.

Dan Hardy literally starts at the top with a description of pool materials and liners, construction, water composition, and chemical additives. This base of information, which may possibly be over the head of the average pool owner, is still an excellent base of knowledge for the remaining chapters. Proper chemical balancing is a skill that takes observation, common sense, and a thorough understanding of each chemical's properties. Hardy describes how to solve pool problems and administer chemicals through his interesting real-life experiences, as well as quick lookup tables giving proper strengths of each substance. Written with a sense of humor, the book stresses some common-sense advice: "Do not have your cell phone on your body while working on pools" (72); "It is a good idea to see if any creatures are in the water before you hop in." (185) Practical, cost-saving tips, such as suggesting that filters be soaked in a solution of dishwashing liquid, help beginners take care of pools without spending money on unnecessary products.

Though the chapters can tend to ramble from the subject at hand to personal experiences, a glossary and index helps the reader jump directly to the topic of interest. The table of contents is well-ordered and the book follows a logical flow. Even more helpful is the step-by-step narrative for each task. Hardy does an exceptional job of describing what clues to look for to troubleshoot a problem, whether the problem is algae bloom or a burned-out pump. Then he takes the reader through detailed, painstaking instructions to ensure the job is done right. Common mistakes and pitfalls are pointed out for each process. Throughout the book, he urges pool professionals to uphold the reputation of pool maintenance by working with quality and craftsmanship.

The Complete Pool Manual is not a quick read, but provides lasting value that the pool owner and professional will return to again and again. Well worth adding to any do-it-yourselfer's bookshelf.

5 out of 5 stars When hardy says complete, he means it!.......2007-08-17

If you own a pool, or are thinking about buying one, you have to get this book.

I have been toying with the idea of getting a spa, and my sister recently got an in-ground pool, so when I started reading this I thought I might pick up a few pointers. Once I got into it, I realized it went way beyond that. When Hardy says "Complete," he means it.

The book covers everything from a summary of the history of pool development, to how to clean modern filtration systems. The author hits the "must know" points of installation so you can keep an eye on how your pool is being put in and ask intelligent questions of the builder. He also goes into the good and bad points of all the different types of pools and pool surfaces, as well as the differences between pools and spas. When he gets into the actual cleaning and water maintenance, the detailed descriptions and instructions are so clear, that I imagine this will be very popular as a training text for professionals.

Another thing that I really liked about the book was how easy it was to find information. The chapters are broken up into headings that were clear and easy to use. There is an exhaustive glossary, and a good index - although I didn't really need the index much, because the section headings pretty much showed me where I needed to look for information. Then there are the diagrams and photos - they added considerably to my understanding of the maintenance issues he was talking about.

The emphasis on safety and how to handle chemicals was a real eye-opener. The writer says, "Almost everything we put into pool water is poison." I had never thought about it like that before. He goes on to discuss the ins and outs of mixing chemicals and what chemicals to use - he's clear about the dangers and advantages of each one as well as when they should and shouldn't be used.

Reading this book is almost like sitting down to talk to your pool man. There are a lot of anecdotes sprinkled through it, and plenty of little asides that keep it interesting. Sometimes it doesn't read very smoothly because of this very chatty style, but that is a minor problem in the book overall. Even if you don't maintain your pool yourself, this book will allow you to ask your pool service man smart questions, and help you figure out if he's doing a good job.
