I'm often let down by Perry's endings. Not enough analysis/explanation is provided, and only the principals are allowed to react to the denouement.
I would like to see a chronological listing of her books. If you read them out of order, too much about earlier happenings is revealed. I knew, for example, that ____ could not have been the murderer in this book because he is alive and well in a LATER book which I had already read. Also, another character's death (from an earlier book) is referred to repeatedly.
I still love the Victorian settings and a glimpse into the rigid lifestyle and the grinding poverty of that time.

If you are reading the stories chronologically, you will have followed the relationship of George and Emily through several novels. While I was initially sad to think his good-natured presence would be missing from future stories, I have to confess that there was little spark between the two. Maybe a change of pace is what Emily (and Perry's loyal readers?) need.
Charlotte (Emily's sister) and Thomas Pitt continue to develop as characters and sleuths in this story. Charlotte is even beginning to learn a bit of judicious caution and investigative skills! While the solution to the mystery was not entirely surprising, the twists and turns of the plot take the reader into some interesting and unforgettable aspects of late Victorian England. I highly recommend this book, and even if this is the first one you read you will enjoy getting to know the characters.

Over time, twin enterprises Cook's Illustrated magazine and America's Test Kitchen have published many books dedicated to providing exhaustively tested recipes--"best" versions of traditional dishes plus definitive takes on kitchen equipment and ingredients. Some series readers have complained of endlessly recycled or rejiggered recipes; others take each book at face value, finding the formulas and cooking insights good and helpful. America's Test Kitchen Family Cookbook, which calls itself a cookbook, cooking school, and kitchen reference in one, offers over 1,200 approachable recipes for a very wide range of dishes--from "weekday" fare like Creamy Rice Casserole, Cheesy Nachos with Spicy Beef, and Skillet Lasagna, to dressier recipes, including Pan-Seared Lamb Chops with Red Wine Rosemary Sauce, Roasted Trout Stuffed with Bacon and Spinach, and Chocolate Marshmallow Mousse. There are "specialty" chapters devoted to sandwiches, drinks, and slow cooker and pressure cooker dishes; a grilling section is a tutorial in itself.Unorthodox, "better-way" approaches abound. For example, a fried chicken formula instructs the cook to wet the bird's dry coating slightly before it's applied for an extra-crunchy crust. Predictably, side bars feature equipment and ingredient evaluations, on bottled salsa, for example; "good food/bad food" photographs show readers what to aim for when producing fare like holiday cookies; and there are tips, charts, and "Cooking 101" sidebars galore. Step-by-step photos offer more direction still.
Though the majority of recipes are sound and yield tempting results, readers poring through the book will note gaffes and curiosities. The recipe for poached eggs, for example, offers the option of extra cooking for "firm yolks" (hard-boiled poached eggs, anyone?) and hamburgers receive an indentation before cooking to avoid "puffy" domed burgers, a novel problem that could, in any case, be solved by proper shaping. The addition of sugar to some savory dishes--for example, a pan sauce for steak--is misguided. Readers should also know that the book, which comes in loose-leaf form, requires some assembly, and that the pages themselves are quite thin, making them vulnerable to spills and tearing in daily kitchen use.
These things said, the book delivers solid, family-friendly dishes with enough fully orchestrated "how- to" to make even novice cooks feel secure when tackling the basics or more ambitious fare.
What's New in the Revised Editon?
First out in 2005, America's Test Kitchen Family Cookbook was praised for its recipe ease, inclusiveness, and wealth of helpful information, but was also criticized for its physical production. A loose-leaf book with its pages included separately, readers found it inconvenient to assemble and its paper impractically thin. The revised edition is printed on heavier stock, and arrives with its pages already on its rings (there are two more now, for sturdiness) with only chapter dividers to insert, a simple task.
In addition, new inside front and back covers provide information on emergency substitutions, roasting guidelines, equivalent measures, and more--and a "Light Recipes" chapter has been included. Without defining precisely what "light" means--fewer fats and carbs, or a combo?--the section offers attractive all-course recipes, such as turkey chili, veggie burgers, meat and cheese lasagna, and chocolate bundt cake. Some readers will welcome the "slimming" of familiar dishes while others will find some of the manipulations--using cornstarch to thicken the sauce in fettuccine alfredo or ricotta to add body to a reduced-fat pesto, for example--unappealing. The book, however, remains a valuable kitchen tool--and one with greater convenience and durability than before. --Arthur Boehm

A More Sophisticated Church Fund Raising Cookbook.......2003-12-26
There are elements of truth in to both positions, but both positions are guilty of not appreciating the audience for which the book was written. The book is a grown-up and slightly citified version of recipes assembled by church groups into a book to be sold to make money for the parish or womens group or some other worthy civic cause. Almost all recipes will produce tasty results without resorting to any hard to find or hard to make ingredient. Few, if any, will ask you to skin a sweet pepper or bake a fillet in paper. Even better, the book contains homespun versions of classic cuisine such as Cassoulet and Coq au Vin and is not shy about asking you to use a few cups of wine in some dishes. This is a perfect cookbook for rural New Hampshire. It does not even bother me that most of the recipes came from the same part of the country. The book may have been better with a better representation of southern, New Orleans, or southwest cuisine, but I don't think the book's audience will really miss it.
What I am afraid the book's audience will miss is an original culinary experience. I just don't see the point of making Coq au Vin with boneless chicken breasts as this book's recipe suggests. You can get a reasonable dish with a winey taste in mushrooms and white meat, but that isn't Coq au Vin. To get real Coq au Vin, you must go to Julia Child or David Boulud. You would even find something more authentic and worthy of the name in a Martha Stewart volume.
Another problem with this book is that there is a lot of inconsistency in the style of recipe writing, even with the single experienced editor.
I think this book would have been a lot better if it had left out all of it's baking recipes. The recipe for pastry dough will probably work, but it totally ignores the wisdom of every good pastry chef I've seen of the Food Network regarding using cold ingredients, handling the dough sparingly, and having a delicate touch with the butter. Good cooking often requires finesse. Good baking always requires finesse. I especially dislike the statement at the beginning of the book which recommends substituting butter for margerine. This substitution can be disasterous in some cases such as cookie baking, and somewhat grim in many other cases, especially if you happen to hit upon a margerine with the warning against cooking in small print.
The book has a patina of erudition in it's naming classic dishes such as Paella Valenciana, but a native of Valencia would probably get heartburn over the statement that Paella Valenciana is made in all sorts of different ways. It is true than hundreds of culinary writers have said this about `paella', but not about `Paella Valenciana'. A sample of false erudition there.
This is a good book for what it does. I would recommend it as a second cookbook, as long as the first cookbook was `The Joy of Cooking' or `James Beard's American Cookery' or some other well regarded basic cookbook which gives proper attention to the subtlties. For a more sophisticated first cookbook, the old standard `Mastering the Art of French Cooking' is as good as it was 40 years ago.
